If you have looked at above recipe, it is from the "British Baking Show" and promoted by Paul Hollywood.
It does have metric measurements, which are not difficult to convert, and in my cooking, I find cooking by weight gives better results, anyway, so you may wish to invest in a kitchen scale. Saffron can be found in most grocery stores these days. It is a bit pricey, as are most unique spices, but you won't be using much, and purchasing some is worth while. Also, saffron in saffron rice or saffron risotto is awesome! Quark cheese is almost impossible to obtain around here, but it is basically just a fresh cheese.
As substitutes for Quark Cheese:
You can use Greek yogurt.
Alternatively use Mascarpone cheese which will be richer
OR - Combine 2 parts ricotta cheese with 1 part sour cream
I tried using cream cheese instead of quark cheese, and did not like it, but cream cheese is considered another substitute.
